This holding cabinet has a unique convection-radiant heating system that allows you to switch from one type of food to the other. Convection heat draws humidity out of the unit through a rear vent to enhance food’s crisp texture, while radiant heat combined with a pan of water can keep items juicy and moist. This holding cabinet also comes with two independently controlled cavities and 5″ neoprene casters for enhanced mobility.
