The Combitherm CT Classic Combination Oven/Steamer brings a vast array of cooking functions and ample space to use them in even the largest restaurant. This stainless steel floor model oven comes with 20 stainless wire shelves which can hold 20 full size sheet pans or 40 full size hotel pans. It’s a boiler-free product, so there’s less maintenance. The unit requires zero clearance, so it can be lined up with the rest of your kitchen, conserving hood and floor space. The cooking modes include steam, convection and combination. Automatic steam ventilation takes place just prior to the end of the cooking cycle by a process called SafeVent, created to alleviate the risk of burns. EcoSmart technology allows it to make efficient use of water and electricity in the cooking and cleaning
